Make pastry and roll out for a double crust pie. Line a 9 inch pan with one sheet of pastry. Cut pared apples into slices 1/4 inch thick. Put half into pan and sprinkle with half of the flour sugar mixture. Add remaining apples and sprinkle remaining flour-sugar mixture, lemon and spice. Brush edges of lower crust with water or egg white. Cover with top crust and flute. Bake at 450 15 minutes, then reduce heat to 325 for 35 minutes or until apples are well cooked.
